- 1 9-inch pie crust (homemade or store-bought)
- 4 large eggs
- 1 cup heavy cream
- 1/2 cup milk
- 1/2 cup shredded sharp cheddar cheese
- 1/2 cup shredded Gruyère cheese
- 1/4 cup chopped sun-dried tomatoes
- 1 tablespoon butter
- 1 teaspoon fresh thyme leaves
- Salt and pepper to taste
Instructions
- Preheat oven to 375°F (190°C).
- Roll out pie crust and press into a 9-inch dish; chill for 30 minutes.
- Line crust with parchment paper and pie weights; bake 10 minutes. Remove weights and bake another 5 minutes until golden.
- In a bowl, whisk eggs, cream, milk, thyme, salt, and pepper until smooth.
- Stir in cheeses and sun-dried tomatoes, then pour mixture into the crust.
- Bake at 350°F for 35–40 minutes, until the center is just set.
- Let quiche rest for 15 minutes before slicing and serving.
Notes
For a richer texture, use half heavy cream and half milk. You can substitute Gruyère with Swiss or mozzarella. To make it vegetarian, use vegetable broth sautéed veggies instead of ham or bacon. This quiche reheats perfectly — 15 minutes at 325°F brings back the buttery crust and creamy filling.
